So I am doing enchiladas in the crockpot, but I haven't ever done it before so lets hope that the experiment goes in my favor today!
crockpot layered beef enchiladas recipe
Ingredients:1 can black beans
1 can salsa
1 can enchilada sauce
ground hamburger seasoned with taco seasoning (I had some on hand from the other night when we had tacos its in the red container)
cheese
corn tortillas (or flour if thats what your family prefers)
Just keep layering until you have used up all your sauce. Make sure that your top is cheese and underneath that is the sauce and you are good to go. I am planning on cooking it on low for 4 hours ish. I will let you know how that works out :)
I plan on pairing it with some homemade cornbread (I will share the recipe later but basically it is 2 boxes of jiffy cornbread mix and a box of yellow cake mix. Follow the directions on each box to make them but just combine it together. So if the cornbread calls for 2 eggs and the cake mix is 3 eggs then you would need a total of 7 eggs. It is really moist and really delicious!)
UPDATE:
After eating these enchiladas for dinner....here is my review...I let them cook to long. I wouldn't let them cook for more than 4.5 hours. I think mine ended up being closer to 5 1/2 by the time we got around to eating them. Everyone LOVED them though so all in all it turned out to be an awesome experiment!
PS This is my favorite place to buy a Slow Cooker
